Commercial and Domestic Fridges
One good example of the differences between domestic and commercial equipment can be seen in fridges. Domestic fridges rely on cold plates which regulate the temperature of the interior. This method is inefficient if the fridge is in constant use as it can take a long time to cool down if the door is opened. A domestic fridge would not be able to maintain a safe operating temperature of 8°C or below in a busy commercial setting and this presents a number of food hygiene risks and does not comply with HACCP requirements.
Commercial fridges use fan systems to distribute cold air throughout the fridge and this means it is able to regulate the interior temperature much more effectively, cooling down the fridge quickly if the door is opened. Commercial fridges are also bigger and easier to keep clean and there are a number of designs available to suit many catering requirements. The two main types of commercial fridge are:
Integral Systems – these stand alone units are convenient and compact and are ideal for small, busy kitchens.
Remote Systems – remote systems are cooler and quieter in operation than integral units, as the cooling equipment (compressor, fan etc) is located away from the cold room/cabinet section. Remote systems are very effective and can be built in different sizes to accommodate large, busy catering businesses including ‘walk in’ versions that offer superior cold storage facilities. Remote systems do not costs much to run day-to-day, but they can be expensive to install and maintain as they are complex units that require specialist engineers.
